Making homemade guacamole is easy and so tasty! You only need a few fresh ingredients and… voila — you feel you’re in a first-class Mexican restaurant in San Antonio. In fact, that’s where I learned to MAKE it! When we visited there a few years ago, it was made table-side… and I watched intently as they diced and mixed! It’s perfect EVERY time!

Start with ripe (though not too soft) avocados. Take 4-5 and cut in half, removing the pits. Use a soup spoon to dig out the ‘meat’ and place into a bowl. (Keep one avocado pit for later!) Discard the empty peels and pits.

Chop a couple sweet onions…

Squeeze some fresh orange (0r lime or lemon, or a combination of these) juice over the onions and avocados.

Season with salt, pepper, and garlic powder or salt — to taste.

Add a few diced tomatoes or a can of drained Rotel. (We love the one with green chilies!)

Finely chop some fresh cilantro (not pictured)…

Then blend all the ingredients until smooth!

Add one avocado pit to the batch of guacamole. Can’t tell you why (Even my chemistry-minded husband doesn’t know the exact reason!) but this keeps the guacamole from turning brown! Amazing!!!

Serve with chips (We love the “scoops” as they lend themselves to better dipping!)…
