Easy Summer Supper!
What to do on a beautiful summer evening when the desire to cook takes a back seat but there’s still a hungry family to feed?
Try this easy summer meal!
Use the vegetables you easily have on hand — Swiss Chard, tomatoes, onions, peppers, asparagus, and the like — and sauté in some olive oil with salt and pepper.
Mmmm!
To the sautéed vegetables, add farm fresh eggs.
I like to add a little sour cream or milk as I scramble.
After mixing until well blended…
… pour onto sautéed vegetables and add cheese. (I like feta, as it adds a nice, salty flavor.) Continue to cook over medium temperatures.
Just before being fully cooked, I remove the mixture from the pan and transfer to a baking dish. I then broil for approx. 3 min…
… after adding grated or shredded cheddar cheese.
Remove from oven and serve.
Wonderful with fresh bread or warm tortillas! Mmmmm!
