Just Peachy!
Recently, I was blessed with a peck of yummy South Carolina peaches. Some were ready for eating (which we did!) and some… not. So, what to do???
Why, make peach cobbler, of course!
After washing and peeling the peaches (the discard is GREAT for hungry goats and chickens!)…
… gather your ingredients. My recipe is one that has been passed down from my husband’s paternal grandmother, as well as a close (completely unrelated) friend. And it’s fool proof!
Recipe follows:
Melt 1 stick of butter in a 13 x 9 pan in the preheated oven.
To the melted butter, mix with a fork:
2 C. flour
2 C. sugar
1 1/2 C. milk
1 T. baking powder
Dash of salt (to taste)
Add peaches evenly.
(This recipe can be cut in half and other fruits can be substituted — even canned fruit. If you use canned fruit, however, it is best if you boil the contents for approx. one minute prior to adding to the mixed ingredients.)
Once all the ingredients are well blended and the peaches are nicely distributed, place in a preheated 375 degree oven.
The cobbler will bake for approx. 3o min., until golden!
Best served with vanilla ice cream and coffee! Mmmmm!!!
